Does anyone know where I can find a write-up of a Chevy 350 swap with a 258 AMC in an 89 YJ? Much appreciated!

Advance Adapters used to sell books that were very good for getting an overview of the whole process based on your specific vehicle. I got one for my Ranger when I was playing with it. They might still sell them. There should be writeups all over the net, and there are plenty of books that cover it.

I did it in an '88 YJ using an AA adapter bellhousing. Let me know if you have any specific questions or help along the way.
